Pumpkin Flaxseed Protein Muffins

This weeks’ find is AMAZING! A few weeks ago I found out you could bake with my favorite pancake and waffle mix, Kodiak Cakes! Then, just this week I found they make a Pumpkin Flaxseed mix…so exciting! There is a recipe right on the box, but I swayed from that to add more protein and make it a bit more healthy. See recipe below.

PUMPKIN FLAXSEED PROTEIN MUFFIN RECIPE
As I mentioned, I love making Protein Muffins. For starters my kids love them and they make a great snack for me as well. I love that I am sneaking in more protein for my family and me. I’ve made Dark Chocolate Banana Protein Muffins before (Message me if you’d like that recipe as well).
INGREDIENTS:
2 cups Kodiak Cakes Power Cakes + Flapjack Mix
1/2 tsp baking soda
1 egg
2/3 – 1 cup Almond Milk
1/3 cup plain Greek yogurt
1 serving of Vanilla Protein Powder (I use Amazing Grass Pure Vanilla)
1 tsp vanilla extract
3 tsp honey
1/4 cup coconut oil, melted
1/2 cup pumpkin puree (optional, I didn’t use the first time and they tasted fine, the second time I used and it added more moistness to the muffin and pumpkin flavor of course)
INSTRUCTIONS:
- Preheat oven to 350.
- Lightly grease or line a muffin tin.
- In a bowl mix Kodiak mix with baking soda.
- In a separate bowl whisk egg, milk, yogurt, and vanilla together.
- In a small bowl, melt honey and coconut oil together in the microwave until melted.
- Add the milk mixture into the dry ingredients and stir. Whisk in the coconut oil and honey together.
- Lastly, add in optional pumpkin puree.
- Scoop batter into 12 large muffin tins. Bake at 350 for 20 minutes.
