Healthy Holiday Appitizers

Only 15 Days Until Thanksgiving & 47 Days Until Christmas! 

The holiday season is coming up fast. That means a lot of holiday parties and a lot of holiday food. Yikes! If you are like me, you are always wondering, “Is there going to be anything healthy at the party for me to eat?” One way to know for sure is to bring something healthy yourself. Take a look at these healthy yet tasty appetizers that the guests will love!

Veggie Pizza With a Twist

Recipe via Betty Crocker. Not only are these delicious, they are absolutely adorable!
Ingredients

  • 4 flavored or plain pita folds or pita (pocket) bread (about 6 inches in diameter)
  • 16 thin pretzel sticks, halved
  • 1/2 cup fat-free sour cream
  • 1/2 cup guacamole
  • 2 tablespoons finely chopped parsley
  • 1/4 teaspoon garlic-pepper blend
  • 1/4 cup very finely chopped red bell pepper

Directions

  1. Cut each pita fold into 8 wedges. Insert a pretzel stick into bottom of pita.
  2. Mix sour cream, guacamole, parsley and garlic-pepper blend. Place approx. 1 tsp sour cream mixture on each wedge.
  3. Blot bell pepper with a paper towel to get rid of any moister from washing. Place about 1/4 tsp of bell pepper on each wedge. Be crafty and have fun with your design. Chil in the refrigerator before serving.
Cinnamon Roasted Butternut Squash

This is one of my favorite recipes. A few of my family & friends make this, as have I and I love it! It is super simple, delicious and healthy. Also, the aroma that this recipe gives off while cooking is amazing! So warm and inviting.
Ingredients

  • 1 Large Butternut Squash
  • 1 Teaspoon Cinnamon
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon of Kosher Salt
  • 1 Teaspoon of Cracked Black Pepper

Directions

  1. Peel & Cut your butternut squash into cubes. Place into a bowl. This takes some work but so worth it.
  2. Toss with olive oil, cinnamon, brown sugar, and spices.
  3. Spread the cubes onto a greased cookie sheet or baking pan.
  4. Bake at 400 degrees until you get the desired level of brownness. Ovens and baking times vary.
Caprese Salad  or Skewers

My sister-in-law always makes these and they are so tasty. Yet another very simple recipe you can bring to a holiday party and they look so festive!
Ingredients

  • Fresh Mozzarella
  • Basil
  • Cherry Tomatoes
  • Balsamic Vinaigrette

These are the staple ingredients that we use in our family, but its ok to adlib and add other things like olives or turkey pepperoni.
 
Directions

  1. Simply clean and cut the necessary produce or meats.
  2. Either toss into a bowl or skewer. If you really want to get creative you can place the skewers or salad in the shape of a wreath.
  3. The final step is to place a bowl of Balsamic Vinaigrette on the side of your dish or drizzle if you wish.
